We had some cauliflower, broccoli & red peppers oven roasted in garlic butter so I chopped those up.
Added 2 eggs
In a separate bowl, I chopped some spinach and added some left-over chick-peas and then heated them for a minute just enough so they wouldn't be cold inside the omelette.
Added just enough grated extra old cheddar to make them stick.
Then, folded it over...
Layered more cheese on top with some fresh pepper...
Put the lid on long enough to melt the cheese...
There was plenty for both both of us even though there were only two eggs in the whole thing. :)
